Ratatouille niÇoise (melted vegetables)
Thinly cut the onions and the zucchinis.
Peel the tomatoes, extract the water and the seeds.
Thinly cut the green and red pepper, chop the garlic.
Fry the onions with olive oil in a pan with a thick bottom.
Fry the zucchinis, the tomatoes, the peppers, and the garlic.
Reduce the temperature, cover the pan and let it cook.
Cook the vegetables individually if you are preparing the dish for lots of guests.
